Description
The Whole Bunch Pinot Noir is produced by Mewstone, a winery located in Tasmania, founded in 2011 by brothers Matthew and Jonathan, with the intention of producing low intervention wines, often with little or no added sulfites. The vineyards grow along the banks of the D'Entrecasteaux Channel.
The grapes were hand-harvested in the second half of April. Once at the winery, the grapes (20% of which were not destemmed) undergo spontaneous fermentation for 21 days. The wine is aged in French oak barrels (40% new) for 9 months. The wine is then bottled without filtration.
The wine has a ruby red color, with floral aromas and notes of red and black fruits like strawberries, cherries, raspberries, and blueberries, along with a light spicy note.
It pairs excellently with pork and red meat roasts, as well as with aged cheeses.
