Terre Siciliane Passito Diamante by Tasca d'Almerita is a sweet white passito wine made from Moscato and Traminer Aromatico grapes grown at the Regaleali Estate. This sweet wine features a well-defined structure and an intense aromatic profile, the result of fermentation in stainless steel at controlled temperature. Freshness and floral notes combine, making Diamante harmonious and pleasant on the palate.
Where it comes from
Passito Diamante originates in the Regaleali Estate. The Mediterranean climate, with hot summers and mild winters, encourages ripening and aromatic concentration. The expertise of Tasca d'Almerita in vineyard management enhances the character of the terroir.
How it is produced
Moscato and Traminer Aromatico grapes are hand-picked into crates to preserve their integrity. After careful selection, fermentation takes place in stainless steel at 16°C for about 25 days. The wine ages in the same containers for six months, developing complexity and roundness.
Tasting notes
It appears deep golden yellow with greenish highlights. The aroma is intense, with stewed fruit, dried apricot, candied fruit, alongside floral notes and acacia honey. On the palate, the sweetness is balanced by lively acidity, offering a fresh and harmonious sip. The finish is long, with candied citrus and sweet spices.
Food pairings
Passito Diamante pairs well with shortcrust pastries, fruit tarts, and dry pastries, and supports the creaminess of desserts. It is also excellent with dark chocolate and aged cheeses such as goat and pecorino.
