Description
What kind of wine is it
Gano di Borgo San Frediano is a Tuscan red wine born from a blend of Sangiovese and Cabernet Franc. Its unique style celebrates the practice of Governo all’Uso Toscano, a technique involving the addition of dried grapes to trigger a second fermentation. This process gives the structure remarkable smoothness. The aromatic profile weaves together floral and fruity notes and offers an elegant palate enlivened by pleasant spicy nuances on the finish.
Origin
Produced in the evocative setting of Tuscany, this wine carries the authentic Florentine identity. The name Gano pays tribute to the tough guy from San Frediano, a famous character from the 1960s radio show Il Grillo Canterino broadcast on Radio Firenze. Although portrayed as a boastful bully often mocked, he left his mark on local language with the expression fare l’Gano. This historical narrative adds to the charm of this label.
How it is made
Vinification begins with the primary fermentation of the Sangiovese blend and Cabernet Franc. At the same time, a selected portion of the vineyards is set aside for prolonged drying. These grapes are then gently pressed and added to the wine to trigger a second fermentation lasting two to three weeks. This distinctive practice gives the final result a captivating profile and enhances both the fruity fragrance and the natural roundness of the taste.
Tasting notes
On the nose, it opens with fresh floral and fruity notes, dominated by intense hints of cherry. The olfactory profile is enriched with a spicy trace that anticipates the tasting. On the palate, it reveals itself as extremely elegant and harmonious, supported by pleasantly integrated spicy nuances. The finish offers a bright and pleasantly soft ending, leaving a clean and persistent sensation on the palate.
Pairings
Its structural features make it the ideal companion for flavorful and intense dishes. It pairs perfectly with a rich wild boar ragù, which enhances its smoothness and fruity notes. It is equally suitable for accompanying game meats, where the spiciness of the wine balances the dish. Lastly, it matches beautifully with aged cheeses, creating a deep and territory-driven taste experience.
When to serve it
This red wine beautifully fits social occasions and proves precious for lunches or dinners that require stylistic clarity and evident fruit. Its character makes it perfect alongside rich first courses and well-structured meat mains. Thanks to its cherry nuances and overall smoothness, it is also ideal for informal evenings, as it maintains a constant technical precision that encourages sharing and immediate enjoyment.
