Description

Pergolaia is a Tuscan red wine that represents the essence of the Caiarossa winery's identity, produced from grapes grown according to biodynamic principles in the hilly area of Riparbella. The result of a harmonious blend of red grape varieties, such as Sangiovese, Cabernet Franc, and Merlot, this wine embodies Mediterranean elegance and the typical characteristics of its terroir, expressing itself with authenticity and character.

After manual harvesting, the alcoholic fermentation takes place separately for each variety in concrete and wooden vats, followed by maceration on the skins. The aging process continues for approximately 12 months in wooden barrels, allowing for a balanced evolution that enhances aromatic complexity and structure without compromising freshness and drinkability.

It presents intense aromas of ripe red fruits, spicy notes, and hints of Mediterranean herbs. On the palate, it is smooth and enveloping, with silky tannins, good acidity, and a long, harmonious finish that reflects the richness of its area of origin.

Ideal when paired with roasted meats, game, or aged cheeses.
