Description
Santo Ippolito by Leonardo da Vinci is a red wine made from Sangiovese, Merlot, and Syrah grapes grown in the vineyards of the Villa da Vinci estate, located in the heart of Tuscany. The vineyards are situated at an altitude ranging from 40 to 130 meters above sea level, with predominantly southern exposures and soils of Pliocene origin rich in shells.
The vinification is carried out separately for each grape variety, with maceration on the skins for about 12 days and fermentation at temperatures between 28 and 30°C. Frequent remontages and délestages are practiced, with a slight bleeding. The aging takes place in oak barrels, mostly new, for a period between 12 and 18 months.
In appearance, it is a deep red with violet hues. On the nose, it expresses spicy aromas, with a pronounced balsamic note and scents of blackberry jam. On the palate, it is balanced, smooth, and enveloping, with a substantial structure that gives the wine great personality.
It pairs perfectly with cured meats, peppered pork roast, and rosticciana.
