Description
Schidione is a wine born from the will of Jacopo Biondi Santi to measure himself in the creation of a Supertuscan that lives up to the name that his family has managed to build in the history of Brunello. It is a wine with a profound evocative, aristocratic, purebred ability.
It originates from the encounter between the Sangiovese Grosso of the BBS11 strain (Brunello Biondi Santi, vine No. 11) with the international Cabernet Sauvignon and Merlot vines. The vinification takes place separately for the individual varieties, with a prolonged maceration of 18 days and malolactic fermentation at the end. The wines are raised in French oak barrels of Tronçais for 24 months and, after being reunited in the blend, they stay for another 6 months in stainless steel vats.
In the glass it has an intense ruby red color with garnet reflections. A complex spiciness with an elegant trace vanilla dictate the step to the nose. The entry into the mouth is soft and powerful, followed by a velvety and fleshy center-mouth and a long-lasting finish.
It is an extremely long-lived wine, capable of maintaining its shape for 40-50 years. As the name suggests - "schidione" is the skewer with which it was used to skewer roast game in the Middle Ages - it is a particularly suitable wine to pair with roasted and non-roasted furred game and important red meat dishes. Alternatively, he can escort a good platter of aged cheeses.
