Description
The Caiarossa wine was born in the Caiarossa company, which is located in the southern part of the province of Pisa, in the Val di Cecina, not far from the small medieval village of Riparbella. Caiarossa is one of the Tuscan companies that has been practicing biodynamics as an agronomic approach since 2005.
The wine is a blend of different red grapes, which undergo a prefermentative maceration of 2-4 days and of 20-30 days on the skins. Alcoholic fermentation takes place in wooden or concrete tanks. Finally, the wine ages first in new French barriques and tonneaux for 18 months, then for 6 months in concrete tanks.
The intense ruby red is striking in the glass. The nose develops on hints of red and black fruits, plum, blueberry and blackberry, with darker notes of tobacco and sweet spices. The sip is structured and round, with a very long finish.
The ideal pairing is with red meat and game dishes, both roasted and grilled.
