Description
Cento Olivi is a Tuscan IGP extra virgin olive oil produced in the heart of Tuscany, in Artimino, where an ancient olive grove preserves the biodiversity of the area. This oil primarily comes from the Mignola cultivar, a rare and little-known variety, cultivated in a historic and dedicated region, between the village of Poggio alla Malva and the Muro del Barco Reale dei Medici. The production is extremely limited and devoted to those who seek authenticity and tradition in every drop.
The olives are handpicked using the "brucatura" method, selecting only the best drupes. The milling is done cold within six hours of harvesting, followed by a light filtration. The oil is stored in stainless steel containers at a controlled temperature and subjected to rigorous checks to obtain the IGP certification, ensuring freshness, quality, and traceability.
It presents a brilliant green color tending towards golden yellow, subject to natural evolution over time. On the nose, it expresses elegant aromas of fresh grass, artichoke, sweet almond, and delicate notes of berries. On the palate, it offers a strong fruity flavor, with a harmonious entry, followed by a spicy note and a persistent bitterness, well balanced with each other, for a deep and refined tasting experience.
