Trentino Superiore DOC Rupe Re Vendemmia Tardiva 2016 Cavit

The Trentino Superiore Rupe Re Vendemmia Tardiva di Cavit rises on the hills of the Valle dei Laghi, Vallagarina and Valle dell'Adige, in the heart of the Trentino Superiore DOC.

It is made with Sauvignon Blanc, Nosiola, Gewürztraminer, Chardonnay and Incrocio Manzoni grapes, whose harvest takes place in late autumn, once the bunches have been attacked by the noble mold Botrytis Cinerea. A soft pressing of the grapes is followed by fermentation and aging in stainless steel tanks for the whole spring. Subsequently the wine remains in the bottle for 8 months before being placed on the market.

It is characterized by an intense golden yellow color, with bright reflections. The nose is expressed with intense aromas of dried apricot, peach in syrup and honey. In the mouth it is pleasantly sweet and enveloping, with a harmonious, fresh and persistent finish.

Excellent to accompany dry pastries, it combines sublime with goose liver and blue cheeses.
