Trentodoc Brut produced by Raeticus is a Brut sparkling wine made in Trentino exclusively from Chardonnay grapes. The bottle refermentation using the Traditional Method results in a fine and consistent perlage, with a dry and fresh style, supported by good structure and an aromatic profile reminiscent of yeast and pastry.
Where does it come from?
It originates on the hills of Trento, where Raeticus cultivates vineyards between 200 and 300 meters above sea level. This hillside origin contributes to a clear flavor profile and a taut sip, ideal for clearly expressing the style of Trento DOC made from Chardonnay.
How is it produced?
After harvesting, a gentle pressing is performed to obtain a fragrant must, followed by static settling. Fermentation takes place at a controlled temperature in stainless steel; in spring, bottling takes place, and the secondary fermentation begins in the bottle. The wine is aged on the lees for at least 24 months, contributing to its precision and complexity.
Tasting notes
The bouquet is elegant and complex, with recognizable hints of bread crust and pastry notes. On the palate, the sip is full-bodied and structured, consistent with extended aging on the lees and a dry, well-defined Brut style.
