Borealis Cuvée Brut by Krone is a sparkling wine made in the Traditional Method from a blend of Chardonnay and Pinot Noir grown in the Western Cape. Bottle re-fermentation and ageing on the lees give the wine lively freshness, balanced structure, and a creamy texture. Its aromatic profile and stylistic precision reflect the identity of its origin area.
Where does it come from
Produced in the Tulbagh Valley, located in the Western Cape region, this sparkling wine comes from an area with a long winemaking history that offers ideal conditions for quality grapes.
How is it produced
The grapes are harvested exclusively at night and hand-selected to ensure freshness and integrity. Only the free-run juice goes into vinification. The re-fermentation takes place in the bottle according to the Traditional Method, with ageing on the lees for about 12 months.
Tasting notes
It appears bright straw yellow with golden reflections and a fine, persistent perlage. On the nose, notes of pineapple, green apple, lime and subtle hints of pastry emerge. The palate offers pronounced freshness, full structure and creamy texture, with touches of caramel and bread crust. The finish is long, savoury and well-balanced.

This Cap Classique pairs well with savoury vegetable pies, sashimi, fish carpaccio, and raw seafood such as oysters and shrimp tartare. Its liveliness and aromatic complexity enhance fresh and delicate dishes, including fresh fruit.
