Description

Ius Naturae, or "law of nature", represents the pinnacle of Bortolomiol's path towards low-intervention cultivation: a challenging and committed choice rewarded by the most authentic expression of the Valdobbiadene terroir. A Millesimato Prosecco capable of highlighting the unique characteristics of each vintage, with a distinct and well-defined identity.

It is produced using white vinification, starting with the gentle pressing of the grapes. Fermentation takes place at a controlled temperature with selected yeasts. The subsequent prise de mousse is achieved by refermentation in an autoclave, using the Martinotti-Charmat Method, for 25-30 days. This is followed by a 3-month maturation on the lees and a further 2 months in the bottle.

It displays a straw yellow color with a fine and persistent perlage. On the nose, delightful notes of apple and pear emerge, supported by an elegant mineral backbone. The palate is clean and dry, with a long and harmonious finish.

Perfectly enhances the flavor of sweet shellfish such as scallops, but also asparagus-based recipes and fish carpaccio.
