Description
A sparkling wine with all the trappings of the case was born in San Pietro di Feletto-Colbertaldo, from grape varieties of Glera (95%), Bianchetta and Perera and from a strictly manual and box harvest, in the second decade of September. After pressing the grapes, the fermentation takes place in steel and the consequent pause on the lees for at least 4 months. Its second fermentation takes place according to the Martinotti method, thanks to a second fermentation of the wine in large pressurized tanks.
Of a splendid straw yellow colour in the glass, with reflections that tend to greenish, it offers your senses a dense and persistent foam and a very delicate perlage. It opens to the nose with a spring bouquet of flowers and fruit, among which the wisteria, acacia and green apple stand out majestically, a prelude to a large and pleasant sip, characterized by a marked freshness.
It is the ideal wine to sip throughout the meal, but it will be pleasantly surprising if paired with shellfish with seafood or raw fish, such as a tartare or, better yet, truffle-based dishes. It also goes well with light and delicate first courses or second courses based on white meats. Try it as an aperitif.
