The Valdobbiadene Extra Dry Coste di Ponente by Col Vetoraz is a Prosecco of great elegance, made from Glera grapes sourced from the steep west-facing vineyards located in the Valdobbiadene area. This careful selection allows for the production of a wine that fully expresses the characteristics of the territory and the balance of the traditional production method.
Winemaking occurs through soft pressing and temperature-controlled fermentation, followed by refermentation according to the Charmat Method in large pressurized containers, lasting from 30 to 40 days, ensuring a creamy and fine foam, followed by aging of 1-3 months on its own lees.
It presents with a fine and persistent perlage, accompanied by an aromatic bouquet that recalls floral notes of rose, acacia, and vine flower, combined with delicate fruity hints of white peach, pear, and apple. On the palate, it is harmonious, savory, and slightly aromatic, with a perfect balance between freshness and sweetness.
Ideal as an aperitif, it pairs magnificently with delicate and refined dishes, making every occasion a special moment of conviviality.
