Description

What kind of wine is it?

Valdobbiadene Prosecco Superiore Brut by Dolceriva is a white sparkling wine made from Glera grapes grown in Valdobbiadene. It stands out for its fresh and straightforward style, with fine bubbles that enhance its fragrance. Vinification in stainless steel and extended sparkling with the Charmat method help preserve aromatic purity and a balanced profile between freshness and savoriness, making it perfect for those who desire a lively and approachable wine.

Where does it come from?

This Prosecco comes from the Guia cru, in the hilly area of Valdobbiadene, between 300 and 400 meters above sea level. The vineyards are planted on medium-steep slopes with clay-marl soils facing south to north, which allows for steady ripening. The climate, influenced by alpine breezes and the proximity of the Adriatic Sea, supports the development of aromas and the retention of acidity; hand harvesting reflects local winemaking tradition.

How is it produced?

Production starts with hand harvesting in the early hours of the morning to protect freshness. After gentle pressing, primary fermentation takes place in temperature-controlled stainless steel, without malolactic conversion. The sparkling process follows the Charmat method with a 70–90 day secondary fermentation and a brief period of maturation on the lees for about 45 days. Temperature control and contact with fine lees ensure freshness and delicate bubbles.

Tasting notes

Visually, it appears as bright straw yellow with fine, long-lasting bubbles. The nose reveals scents of acacia flowers, notes of green apple, lemon, and grapefruit, and a hint of aromatic herbs. On the palate, it is soft and sufficiently structured, with lively acidity balancing its savoriness and crisp fruit. The finish is harmonious, with citrus hints and a subtle mineral note.

What does it pair with?

This Prosecco matches well with an aperitif of battered vegetables and light fried foods, enhancing the crunchiness of the dishes. It also works with fresh or semi-aged cheeses like young Montasio or lightly aged Asiago. In Venetian cuisine, it pairs harmoniously with radicchio risotto or baccalà alla vicentina, complementing its structure with the finesse of regional dishes.

When to serve it

Valdobbiadene Prosecco Superiore Brut by Dolceriva expresses its freshness and vibrancy best within the first two years after bottling. It is not intended for long aging, maintaining its aromatic profile and versatility in pairings for at least 18 months if stored well. It is advisable to serve it between 6 and 8°C to highlight its citrus and floral notes, making it ideal for convivial events and aperitifs.
