Ventisquero Sauvignon Blanc Riserva is a dry white wine produced by Ventisquero in the Casablanca Valley, Chile. Where does it come from
The Casablanca Valley, between Santiago and the Pacific Ocean, features a cool climate influenced by sea breezes and morning fog. These conditions slow down ripening and preserve acidity and intense aromas. The granite-origin soils, with clay and sand, impart a clear minerality and a dry finish, typical traits of the area’s whites.
How is it produced
Sauvignon Blanc is harvested between February and March with an eye to integrity and freshness. In the cellar, a cold maceration on the skins for 12–14 hours is followed by gentle pressing. Fermentation in stainless steel at a low temperature preserves the varietal profile, while four months of aging on the lees provide more roundness and persistence.

In the glass, it is a straw yellow with greenish highlights, clear and bright. The nose reveals citrus notes like lime and grapefruit, with hints of pineapple and pear, alongside the typical herbaceous nuances of Sauvignon Blanc and a mineral touch. The palate is fresh and savory, with a medium body, good persistence, and citrus returns that leave a clean sensation.

This Sauvignon Blanc works well as an aperitif and pairs with fish and seafood dishes, including raw preparations.
