Description

What kind of wine is it?

Cantina Santadi's Shardana is a red wine produced in Sardinia in the Valli di Porto Pino area, made from a blend of Carignano and Syrah . Vinification involves fermentation in stainless steel with maceration on the skins, followed by a period of aging in French oak barrels . The wine is full-bodied and harmonious, characterized by well-integrated tannins and a long, persistent finish, making it a structured red wine suitable for pairing with intensely flavored dishes.

Where does it come from?

This red wine is grown in the Sulcis region, in southwestern Sardinia, from bush-trained vineyards located near the coast. The vines grow on loose, sandy soil , a natural condition that helps keep yields low and promotes greater cluster concentration. The warm, constantly breezy climate plays a key role in balanced ripening and gives the wine a bold character that faithfully reflects the severity and vocation of the coastal landscape.

How it is produced

The grapes are harvested strictly by hand between late September and early October, before undergoing fermentation in stainless steel . Maceration on the skins lasts approximately two weeks, allowing for a controlled extraction of color and structure. The wine then ages for approximately twelve months in barrique, a technical choice designed to round out the tannic structure and enrich the spicy profile . This production process focuses on the varietal expression of the grapes and combines precision and balance.

Tasting notes

It displays a dark ruby red color, compact and of great intensity. The nose evokes aromas of small berries, ripe cherry, blackberry, and currant, enhanced by nuances of black pepper typical of Syrah. On the palate, the entry is broad and harmonious, supported by rich fruit and ripe tannins that envelop the sip in an orderly fashion. The tasting concludes with a very persistent finish , where the dark aromas and spicy notes perceived on the nose clearly return.

What does it pair with?

Its robust structure and long finish make this red a natural accompaniment to game and roast meat dishes. It pairs perfectly with grilled dishes , where the smoky notes blend seamlessly with the fruity and spicy notes on the palate. In the local Sardinian tradition, it pairs perfectly with grilled lamb , balancing the fatty component and intense cooking with its well-defined tannic structure and depth of flavor.

When to serve it

This red is designed for convivial occasions that require a bottle of character, capable of supporting the intense flavors of a substantial meal. Its structure makes it the star of lunches and dinners featuring meat dishes , ensuring a smooth and continuous tasting experience. The period of aging in wood helps create a harmonious flavor profile , offering a balanced sip in which the richness of the fruit blends seamlessly with the spices until the very last sip.
