Description
Grola originates from one of the most iconic vineyards in Valpolicella, situated on hilly terrain with south-east exposure and clay-limestone soil, low in organic matter but rich in texture. This wine represents Giovanni Allegrini's vision of creating a red of great elegance and personality, using mainly Corvina Veronese, Corvinone, and Rondinella grapes, cultivated with the Guyot training system.
Vinification takes place in temperature-controlled steel tanks, with fermentation lasting about 15 days and delicate extractions. Aging occurs over 16 months, divided between second-passage barrique for half of the mass and large barrels for the other half, followed by an additional 10 months of rest in the bottle before commercialization.
In the glass, it expresses a complex bouquet of ripe fruits such as blackberries and cherries, violet flowers, accompanied by spicy and tertiary notes of vanilla, tobacco, and dark chocolate. The structure is solid, supported by ripe and velvety tannins, well balanced by fresh acidity that accompanies a persistent and harmonious finish.
Perfect with meat-based first courses, stewed mushrooms, or mature non-spicy cheeses, it is also ideal with flavorful meat dishes such as braised or stewed meats.
