Description
The Valpolicella Classico from the Gerardo Cesari company is a red wine produced with a blend of Corvina, Corvinone, Rondinella, and Molinara grapes. The vineyards, located in various areas of the Valpolicella Classica in Veneto, are cultivated on calcareous soils of alluvial-morainic origin.
Production begins with the grape harvest between September and October, followed by red wine vinification. The grapes macerate on the skins for 10 days to extract intense colors and aromas. Then the wine undergoes malolactic fermentation and remains in stainless steel tanks for at least 4 months before bottling. After a short rest in the bottle, the wine is ready for the market.
In appearance, this wine shows a ruby red color with violet reflections. The aroma is fresh and fruity, with evident notes of berries and cherry. On the palate, it is dry, velvety, and well-balanced, with a pleasant harmony between acidity and tannins.
This Valpolicella Classico is the ideal accompaniment for pasta dishes with meat sauce.
