Description
The Valpolicella Ripasso Classico Superiore Villa Novare di Bertani was born in vineyards located on the Villa Novare estate, in the heart of the Classic Valpolicella.
It is mainly produced with Corvina and Rondinella grapes, harvested only by hand in late September. Fermentation takes place in stainless steel tanks at a controlled temperature of 18-20 ° C for about 3 weeks. Subsequently the must referments over the skins of Recioto and Amarone which, drawn out still sweet, have a good content of active yeasts which allow a second fermentation of the wine. Ripasso Villa Novare also makes a small addition of dried grapes. This refermentation takes place at a controlled temperature of 15-18 ° C for about 7 days. The wine ages in barriques for 15 months before being bottled.
Villa Novare is characterized by an intense purple red color. The nose opens with hints of plums and cherries, enriched with pleasant spicy notes of licorice. On the palate it is soft and full, with a savory and slightly spicy aftertaste.
Perfect to accompany first courses and grilled red meats, it is ideal in combination with white meats.
