Description
The Valpolicella Ripasso Superiore Mara by Gerardo Cesari comes from vineyards located in the heart of Valpolicella, in the province of Verona.
It is predominantly made with Corivina Veronese grapes and with Rondinella, Negrara, and Rossignola grapes. Once fermentation is completed, the wine is refermented with Amarone pomace for 15-18 days, according to the traditional Ripasso technique, in order to gain greater robustness, color, and aromas. After malolactic fermentation, the wine is aged for approximately 12 months in Slavonian oak barrels and French oak tonneaux, then for an additional 6 months in the bottle before further commercialization.
It stands out for its medium-intense ruby red color. On the nose, one immediately perceives typical scents of ripe morello cherry and raspberry, accompanied by pleasant spicy and woody notes. On the palate, it reveals itself as powerful, warm, and silky, a wine of extraordinary persistence.
It excels with game and red meat, both grilled and stewed.
