Description

The Primo Ripasso Castelliere delle Guaite by Montresor is a red wine with a decisive and enveloping character, produced with Corvina, Rondinella, and Molinara grapes grown in the hilly area of Valpolicella. It is a wine that preserves the identity of the territory and the tradition of the ripasso method.

The grapes are harvested between September and October and vinified according to traditional methods, with destemming and long maceration on the skins. After the first fermentation, the wine is refermented on the still sweet pomace of Amarone, acquiring structure and complexity. This is followed by aging in wood for about two years.

It appears with a ruby red color tending towards garnet. The aroma is rich with cherry, blackberry, and dried fruit. On the palate, it reveals good structure, ripe fruit, soft and velvety tannins, and a long aromatic persistence, thanks to the passage in wood.

Perfect with international cuisine meat dishes, game, and aged cheeses.
