What kind of wine it is
Valpolicella Superiore Campo Prognai by Ilatium Morini is a red wine with a structured profile, produced in Veneto from a blend of Corvina, Corvinone, Rondinella, and Croatina. The wine is distinguished by its aromatic complexity and well-integrated tannins. Fermentation takes place in stainless steel tanks at a controlled temperature, with délestage and remontage to enhance aroma and color extraction. Ageing in French and American oak barrels defines its character and offers balance between fruity notes and spices.
Where it comes from
The Campo Prognai vineyard is located in the Illasi valley, in the province of Verona, between 200 and 300 meters above sea level. The continental climate with marked temperature changes encourages the aromatic concentration of the grapes. The calcareous-clay soils, rich in minerals and well-drained, confer gustatory tension and a distinctive minerality. The area boasts a long winemaking tradition reflected in the style of the wine.
How it is produced
The grapes are hand-picked at the beginning of October and immediately destemmed. Fermentation takes place in stainless steel tanks at a controlled temperature, with remontage and délestage to extract fine tannins and intense color. After malolactic fermentation, the wine matures for 12-15 months in oak barrels (French and American, second and third passage). A period in glass concludes the process before sale.
Tasting notes
In the glass, the wine shows a garnet red color with ruby highlights. The bouquet is intense and complex, with aromas of ripe red and black fruits such as cherry and plum, spicy notes of vanilla and black pepper, and a mineral shade. The palate reveals a medium-full body, smooth tannins, balanced freshness, and a persistent finish recalling jam and toasted bread.
Food pairings
Valpolicella Superiore Campo Prognai matches well with dishes from Veronese and Italian cuisine. It is ideal with ragù pasta, lasagna, and grilled meats, enhancing the succulence of sauces and the structure of meats. It is also excellent with roast beef and baccalà alla vicentina, where the savory nature of the fish finds balance with the wine’s structure. It also pairs well with aged cheeses such as Monte Veronese d’alpeggio.
When to serve it
Serve at 16-18 °C in medium-sized glasses to enhance the aromas. The wine is ready after a short period of bottle aging and can develop further in the cellar for several years. Thanks to its structure and balance between freshness and tannins, it is perfect for convivial dinners and, with aging, expresses harmony and complexity for many years.
