Description

The Valpolicella Superiore Corte Giara by Allegrini is a red wine from Veneto produced on the eastern hills of Valpolicella, with a Southeast exposure on clay and limestone soils. The varieties used are Corvina Veronese and Rondinella, grown on trellises and hand-picked in the first half of September. This wine reflects the elegance and tradition of the area, offering a modern and refined interpretation of the territory.

The vinification takes place in stainless steel tanks at a controlled temperature between 26 and 30°C for about 8-10 days, with periodic remontage to aid extraction. This is followed by 12 months of aging in wood, equally divided between Slavonian oak casks and barriques, and an additional 2 months in bottle to complete maturation before being marketed.

On the nose, intense cherry notes are distinguished, accompanied by hints of aromatic herbs, white pepper, and nuances of undergrowth. On the palate, it is full and harmonious, with an acidic backbone and a sapid note that provide tension and drive, enriching the structure with elegance and depth.

It pairs excellently with roasted meats such as pork, guinea fowl, goat, and lamb, as well as dishes based on mushrooms and medium-aged cheeses.
