Description
The Saperavi de Gitana is an intense red wine produced in Moldova from Saperavi grapes, a native variety that fully expresses the character of its region of origin. The grapes, exclusively hand-picked, are rigorously selected to ensure maximum quality and authenticity in every bottle.
The winemaking process involves alcoholic fermentation in cement amphorae, using exclusively indigenous yeasts. Subsequently, the wine matures for 12 months in the same amphorae, where malolactic fermentation also takes place, helping to develop a deep and complex structure.
Visually, it presents a dark purple color with intense reflections. On the nose, it opens with notes of red fruits and spicy scents, enriched by a minerality typical of amphora maturation. The sip is straightforward, tannic, and dense, with a generous body and a very long finish, in which licorice root and black cherry emerge.
Ideal with lamb or veal roasts, mushrooms and baked potatoes, cuts of meat like Kobe or T-bone, and aged cheeses.
