What type of wine is it?
Paradiso Scaia by Tenuta Sant’Antonio is a Venetian red wine created from a blend of Corvina, Corvinone, Rondinella, and Cabernet Sauvignon. This expression brings together indigenous grapes with a renowned international variety, resulting in a structured style. Thanks to the drying process and ageing in wood, it offers a smooth and warm profile, supported by clear fruity and spicy notes.
Where does it come from?
This wine originates in the municipalities of Illasi and Mezzane, in the province of Verona. The combination of native varieties and the international grape gives a distinct territorial identity, enhanced by the style of Super Veneto.
How is it produced?
Production begins with a completely manual harvest of the grapes, followed by a drying period of twenty days. After gentle pressing of the bunches, the must undergoes temperature-controlled fermentation for ten days. Vinification finishes with twelve months of refinement in oak tonneaux, essential for enriching the wine's texture.
Tasting notes
In the glass, the wine displays a ruby red color with a purple rim. The bouquet offers clear fruity aromas of morello cherry and wild berries, interwoven with pronounced black pepper tones, licorice, cocoa, and tobacco. On the palate, it is enveloping and warm, characterized by a velvety texture.
Food pairings
Thanks to its softness, this red goes perfectly with intense first courses such as truffle-based dishes or classic meat ragù. Its warm structure and spicy nuances make it ideal for enhancing grilled red meats and aged cheeses. In the Veronese tradition, it pairs beautifully with pastissada de caval, where the cocoa and tobacco notes complement the flavors of slow-cooked dishes.
