Description
Appassimento Dal Moro originates from a selection of native Veronese grapes from 20-25-year-old vines in the hilly area of Verona, located at an altitude of 100-350 meters above sea level, on predominantly clayey soils with some calcareous parts.
The bunches of Corvina Veronese, Corvinone, Rondinella, and other complementary varieties are harvested late September with manual selection. The grapes undergo a drying process of 60 days to increase the concentration of sugars and aromatic substances. This is followed by fermentation at a temperature of 25°C with a maceration period of 10 days. Once malolactic fermentation is complete, the wine is aged in wooden barrels.
It reveals itself in the glass with a beautiful ruby red color enlivened by more evolved shades. The nose reveals complex aromas, where cherry and vanilla stand out. On tasting, it is harmonic, full and velvety, with a long finish on spicy tones.
Perfect for pairing with red meat main courses, grilled meat, and braised dishes. Recommended to accompany all aged cheeses.
