Description

Animologico Verdicchio di Matelica by Tenuta Belisario is a white wine with no added sulfites. The grapes come from vineyards located at 420 meters above sea level, with southern exposure and loose soils.

Harvesting is done manually in early October, using grapes of the tight-clustered Verdicchio matelicese clone, cultivated with chitosan, a natural product extracted from mushrooms and crabs. The winemaking process includes sanitizing the grapes in a cold room with an ozone wash and cooling to 0°C, followed by a very brief cryomaceration in the press for 1 hour. Fermentation takes place at a temperature of 14-16°C for about 25 days in stainless steel tanks, using naturally selected yeast with low sulfur dioxide production. The wine matures for 14 months in stainless steel, with completed malolactic fermentation and must clarification.

The wine displays a bright straw yellow color. On the nose, it offers aromas of white fruit and fresh flowers, with mineral notes. On the palate, it is fresh and balanced, with good acidity and a persistent finish.

It pairs perfectly with fish dishes, fresh cheeses, and light first courses.
