Description
The Novello di Teroldego di Mezzacorona is produced only from grapes of Teroldego della Piana Rotaliana, a native grape that lends itself well to this type of processing.
The vinification process begins with the carbonic maceration of the whole bunches for about 6-7 days at a temperature of about 27 ° C. We then proceed with pressing and fermentation at a controlled temperature of 20 ° C.
It shows a ruby red color with violet reflections. The scent is intense and fruity, with evident hints of wild berries. In the mouth it is dry and fruity, very soft.
It goes well with mushroom soups and first courses of traditional Trentino cuisine.
