Elgin WO Riesling 2023 Paul Clüver

The Village Riesling by Paul Cluver is a white wine produced exclusively from Riesling grapes grown in vineyards that are 14 and 36 years old, located at about 300 meters above sea level. The soils, characterized by Bokkeveld shale and light clays, are managed according to regenerative farming practices that promote soil health and varietal expression.

After a careful double selection of the bunches, the juice is fermented separately by parcel, with 44% of the wine fermented in large oval oak barrels. A portion of the batch undergoes fermentation arrest to maintain a natural residual sugar, which is then blended back with the dry fermented wine and aged on the fine lees. The final blend precedes stabilization and bottling.

Straw-colored with greenish highlights, it presents on the nose an aromatic bouquet of fresh fruit and citrus flowers. On the palate, it is distinguished by lively lime notes and the pleasant tension between residual sweetness and acidity, with a pronounced minerality that gives depth, structure, and persistence.

Ideal when paired with sweet potato and gorgonzola salad, shrimp sautéed with paprika and sesame, or pork ribs with pomegranate and coriander sauce.
