Description
The Chardonnay Les Saugettes by Pierre Girardin comes from a small plot located in the lieu-dit Grusse, planted around 1970, with a west-facing exposure and calcareous-marl soils typical of the Jura. The healthy and old vines, about 50 years old, are cultivated with limited yields to preserve the concentration of the fruit.
The winemaking process involves manual harvesting and whole cluster fermentation with indigenous yeasts. The wine ages for 12 months in oak barrels, followed by an additional 8 months of maturation in steel; it is neither clarified nor filtered to maintain its territorial expression intact.
It stands out for its elegant minerality and vibrant tension, with a well-defined structure reminiscent of the freshness of the great white wines of Burgundy. The nose reveals delicate notes of citrus and flint, while on the palate it shows a balance between savoriness, finesse, and persistence, underlined by a restrained yet lively acidity.
Excellent to pair with baked fish or shellfish dishes.
