Description
The Chardonnay Parcelles d'Excellence by Labouré-Roi is a white wine obtained from vineyards located in three areas in southern France: the slopes of the Montagne Noire (Minervois), the foothills of the Cévennes, and the upper Aude valley. The clay-limestone soils and southern exposures ensure excellent ripening of the grapes, while altitudes between 250 and 400 meters provide freshness, liveliness, and structure. This wine embodies the sunny character of the south, combined with the refined style of Labouré-Roi's great Chardonnays.
Vinification involves careful selection of grapes, musts, and juices vinified separately. Particular attention is paid to the pre-fermentative phase, with gentle destemming, progressive pressing, and cold stabilization to enhance the aromatic potential. Maturation occurs on fine lees for six months, with partial integration of the press wine according to tastings, to achieve a perfect balance between purity and elegance.
The color is bright golden yellow. On the nose, it expresses itself with finesse and complexity, offering notes of vineyard peach, citrus, and hawthorn. On the palate, it is full, elegant, with an aromatic purity that translates into hints of white flowers and citrus, supported by persistent minerality and a long finish.
Ideal with cold appetizers, buffets, roast chicken, or grilled salmon.
