Description

The Pinot Noir Parcelles d'Excellence is an elegant expression signed by Labouré-Roi, a historic maison founded in 1832 in Nuits-Saint-Georges in the heart of the Côte de Nuits. The grapes come from south-facing vineyards, grown on clay-limestone soils located at the foot of the Montagne Noire, the Cévennes, and in the upper Aude valley. The altitudes ranging from 250 to 400 meters ensure freshness, vivacity, and structure to the wine.

Vinification is done separately for each selected parcel. After a cold pre-fermentation maceration to extract color and aromatic freshness, follows moderate temperature fermentation. The process concludes with a warm post-fermentation maceration to refine the tannins and texture. Aging continues for four months on fine lees before the final blending.

It shows a garnet red color in appearance. The aroma is fine, fresh, and delicate, with hints of cherry, black cherry, and sweet spices. On the palate, it is full and robust, with aromas of red fruits and spices, supported by a long and fresh finish that enhances its balance and pleasantness.

It pairs perfectly with lamb or veal, tofu, cold cuts, grilled dishes, and cheeses.
