Description

La Bergerie is a dry white wine produced by Domaine du Gringet in Ayze, in the Savoie region of France. Made from Gringet grapes grown on yellow marl soils in the lieux-dits Le Pré Milleret and Chez Reydet, with southern exposure, this wine expresses the identity of the territory through non-certified biodynamic viticulture and organic practices in the process of being certified.

The winemaking begins with a slow pressing lasting 4-7 hours, followed by a static settling for 24 hours. Fermentation occurs spontaneously thanks to indigenous yeasts. The wine is then aged for 9 months on the lees in egg-shaped concrete containers for two-thirds of the volume and in stainless steel for the remaining third, with further bottle aging for an additional 10 months.

The aromatic profile is characterized by notes of white fruit, citrus, and light herbal nuances, with a well-defined minerality. On the palate, it stands out for its freshness, balance, and a persistence that highlights the elegance of the grape variety and the typicity of the soil.

Perfectly paired with fish dishes or soft cheese.
