Description

What kind of wine it is

Vin des Allobroges Argile Blanc by Domaine des Ardoisières is a still white wine from Savoie made from Chardonnay, Jacquère and Mondeuse Blanche. The winemaking process involves direct pressing and spontaneous fermentation with native yeasts, keeping the profile clear and closely tied to the terroir. Ageing in large barrels and first- and second-passage barriques adds structure and complexity while maintaining a fresh and precise palate. The result is taut and well balanced between fruit, herbal notes and slight spicy hints.

Where it comes from

The grapes come from the Le Villard area of Savoie, on west-facing slopes that encourage gradual ripening and preserve acidity. The Alpine climate, with pronounced temperature swings between day and night, develops defined aromas and a taut texture. The predominantly clay soils give volume and continuity to the sip, while altitude and ventilation support freshness and precision. The Vin des Allobroges appellation highlights mountain varieties and vineyard parcels, emphasizing finesse and identity.

How it is produced

Harvesting aims to preserve freshness and aromatic integrity, taking place after grape selection based on sugar-acid balance. In the cellar, direct pressing is used to limit extraction and maintain fruit purity. Fermentation takes place spontaneously with native yeasts without intrusive interventions, allowing the character of the vineyard to emerge clearly. Ageing in large barrels and first- and second-passage barriques provides measured oxygenation, stabilizes structure, and rounds out the bouquet without masking freshness.

Tasting notes

In the glass it shows a bright straw yellow color. On the nose, fresh citrus, pine needles and white flowers emerge, followed by hints of white-fleshed fruit and light spicy nuances. On the palate it is dry, smooth and taut, with well-integrated acidity and a fine structure attributed to gentle oak ageing. The finish is clean and persistent, with citrus returns and a savory touch that invites another sip.

Food pairing

This white wine pairs naturally with shellfish, seafood and grilled fish thanks to its freshness and savory finish. It is also balanced with richer yet clean dishes such as seared scallops, seafood risotto or baked sea bream with aromatic herbs. For a local touch, it goes well with mild mountain cheeses and light versions of Savoie specialties, where acidity balances the creamy elements. It also works with a warm tartiflette.

When to serve it

This is a white wine for those who seek aromatic precision and versatility, perfect from aperitif through to fish main courses. Serve chilled at a controlled temperature to enhance the citrus, herbal notes and saline texture. A short time in a decanter can open up the wood nuances. The wine is ready to drink now, but its structure from barrel ageing allows for brief bottle evolution, further enhancing aromas and texture. The ideal drinking window is over the next few years, when freshness and complexity remain balanced.
