Description
The Perlinetto Rosé from Vallepicciola is a sparkling wine made using the traditional Pas Dosé method from 100% Pinot Noir grapes, cultivated in the vineyards of Vallepicciola located in Pievasciata, in the municipality of Castelnuovo Berardenga. These vineyards are situated at an altitude between 420 and 480 meters above sea level, on soil composed of limestone, clay, marl, and alberese, ideal for imparting minerality and structure to the wine.
The vinification process involves gentle pressing in an environment protected by inert gas and dry ice, followed by alcoholic fermentation in steel with aging on fine lees for six months. The wine then undergoes second fermentation in the bottle with aging on the lees for 60 months, without the addition of liqueur d’expédition at disgorgement, fully respecting the Pas Dosé style.
It appears with a delicate pink color reminiscent of onion skin, accompanied by a fine and persistent perlage. It exhibits floral and citrus notes on the nose, while on the palate it reveals a long, savory, and enveloping taste, with a perfect balance between freshness and structure.
Perfect for pairing with oysters, raw fish, seafood, and fried anchovies.
