Description
Pinotage is one of the main wines produced in South Africa, born from a variety obtained by crossing Cinsault and Pinot Noir. It is also a wine that made the Diemersfontein company famous, located in the heart of the Wellington Valley.
The grapes are harvested when fully ripe, or even slightly overripe, in order to bring bunches with a high sugar concentration into the cellar. At the end of the cold maceration, the first phase of alcoholic fermentation begins, interrupted by pressing and then completed in steel tanks. It carries out malolactic maceration on its marc and ages for 6 months in French oak barrels.
It is ruby red, at sight. The notes of chocolate, cocoa, coffee and dark fruit in jam are striking. The taste confirms its soft and enveloping character, which closes on a balsamic and mentholated trail.
To be combined with a game-based dish, such as venison ribs with red fruit compote.
