What kind of wine is it
Baron Edmond is a red wine produced by Rupert & Rothschild Vignerons in the Western Cape, born from a blend of Merlot, Cabernet Franc, Cabernet Sauvignon and Malbec. This red stands out for its structure and complexity, thanks to an extended maceration on the skins that enhances its depth. Fermentation takes place in wooden and steel tanks, offering an elegant and full profile, with a medium-long aging potential.
Where does it come from
The wine originates in the Western Cape, at the foot of the Simonsberg Mountain.
How is it made
The must ferments in stainless steel tanks and wooden barrels. A maceration of 16-20 days allows for careful extraction of color and tannins.
Tasting notes
In the glass, the color is intense ruby red with violet hues. The bouquet reveals aromas of ripe blackberries and blueberries, with notes of fresh coriander and dark chocolate. On the palate, it is rounded and well-structured, with soft tannins and a balanced acidity supporting a persistent finish with fruity returns and sweet spices.
Food pairings
Baron Edmond pairs well with roast red meats, oven-baked leg of lamb and braised beef. Its tannic structure and good acidity also adapt to South African dishes such as bobotie. Among Italian recipes, it shines with stewed wild boar and meat ragù lasagna, with the fruity and spicy notes complementing the dishes’ intense flavors.
When to serve it
This red can evolve in the cellar for several years, developing further aromatic complexity. It is recommended to open and decant the wine at least one hour before serving to best appreciate its profile. When enjoyed young, it maintains freshness and fruit. Between three and seven years, it expresses tannic evolution and spicy-aromatic notes. Perfect for convivial occasions and important dinners.
