Montes Wines' Outer Limits line's Pinot Noir is a fresh and elegant red wine, produced with 100% Pinot Noir grapes cultivated in the vineyards of Zapallar, just 7 km from the Chilean Pacific coast. The granitic soils, with clay, silt, and superficial gravel, combined with the climatic influences of the Coastal Cordillera and the ocean, give this wine a mineral character and great typicity from a cool climate.
Harvesting is done manually in crates during the early morning hours, followed by double grape selection. Various maceration and fermentation techniques are used to enrich the aromatic profile, including cold maceration of de-stemmed grapes and the use of whole clusters treated with dry ice. Fermentation occurs at controlled temperatures with gentle pump-overs, followed by 12 months of aging in French oak barrels, 15% of which are new, and in ovoid cement tanks for malolactic fermentation.
In appearance, it presents a bright, young ruby red color. The nose offers aromas of fresh red fruits such as raspberry, cherry, and strawberry, accompanied by typical notes of damp earth, flowers, and aromatic herbs, with subtle nuances deriving from wood aging. On the palate, it is fresh, light, and juicy, with flavors reflecting the nose and an elegant, silky finish.
It pairs perfectly with fish dishes, salads, and cheeses.
