Description
The Sauvignon Blanc from the Outer Limits line by Montes Wines is a white wine made from 100% Sauvignon Blanc grapes grown in the vineyards of Zapallar, only 7 km from the Chilean Pacific coast. The marine-origin soils and the unique climate, influenced by both the Coastal Range and the Andes, give the wine a pronounced freshness and distinctive saline character, best expressing the coastal terroir typical of Aconcagua.
The harvest is done manually at dawn in crates, with subsequent refrigerated transport to the winery. After careful selection of the bunches, cold maceration is carried out for 12 to 24 hours, followed by controlled alcoholic fermentation at a low temperature (10-12 °C) with selected yeasts. After fermentation, the wine remains on fine lees for 6-8 months before being stabilized, filtered, and bottled, without any passage in wood.
Visually, it presents a bright straw yellow color. The nose is very expressive and elegant, with notes of boxwood, fresh green pepper, grapefruit, and white guava. On the palate, it offers vibrant freshness and great liveliness, with an elegant body and a long, inviting persistence, characterized by citrus and exotic aromatic returns.
It pairs perfectly with oysters, sea urchins, shellfish, salmon ceviche, carpaccio, and bruschetta with goat cheese.
