Tagliatelle with mushrooms

Tagliatelle with porcini mushrooms call for wines that can echo woodland aromas, suit the porous texture of egg pasta, and respect the delicacy of the sauce. Among structured whites, a Pinot Bianco from Alto Adige or a Fiano d'Avellino provide the right savoriness and softness to envelop the mushroom without overwhelming it. Moving to light, refined reds, the quintessential pairing is a Pinot Nero from Alto Adige or an Etna Rosso: their vivid acidity and notes of underbrush and delicate spices meld beautifully with the porcini’s earthy aroma.

If the recipe turns richer and creamier—perhaps finished with butter, cream, or cheese—a Nebbiolo or a Barbera d'Asti offers the right freshness and a weave of gentle tannins that helps cleanse the palate with every bite. If, on the other hand, the tagliatelle are enriched with more savory, structured ingredients—such as sausage or crisp speck—a Rosso di Montalcino or a Lagrein can balance the dish’s rich, spicy side thanks to their fine structure and echoes of red fruits and pepper.
