Description
The Toscana Capro Rosso was born from the vineyards of the Fattoria di Bagnolo, historical property of the Marquises Bartolini Baldelli located in the municipality of Impruneta.
Produced mainly with Sangiovese grapes and with Colorino and Cabernet Sauvignon grapes, it was born following the grape harvest in the first decade of October. After a period of fermentation in steel containers at controlled temperature, the maceration process begins on the skins lasting about 18 days. The malolactic fermentation continues in steel containers, until it reaches the refinement phase, lasting 12 months, in new French barriques and tonneaux. Following the bottling that takes place directly at the origin by the winemaker, the Capro Rosso continues its aging for another 12 months.
Characterized by a ruby red color, with purple hues, it has a fruity olfactory bouquet rich in scents, among which cherry, black cherry and blackberries stand out clearly, enriched with notes of tobacco, vanilla and leather. On the palate it is vigorous, soft thanks to the dense and round tannins, with a long and persistent finish.
Ideal as a wine to combine with grilled red meats, it is also excellent with roasts. Perfect to combine with bitter chocolate.
