Description
Pecorino Anfora di Cirelli is a white wine made from Pecorino grapes grown on clay and limestone soils, managed according to organic and biodynamic practices. It originates in Abruzzo from a viticulture focused on maintaining the natural balance of the vineyard and aiming to express authenticity and territorial character.
The grapes are destemmed and undergo skin maceration in buried amphorae, followed by gentle pressing and spontaneous fermentation. The wine is aged in amphorae for an extended period, during which it benefits from slow and steady micro-oxygenation that enhances its harmony and aromatic evolution.
On the palate, it is soft and enveloping, with a balanced structure supported by natural freshness. The aromatic profile is complex and layered, with fruity and floral sensations integrating with deeper, more tactile notes, while the finish is long and harmonious.
It pairs elegantly with structured fish dishes, white meats, medium-aged cheeses, and Mediterranean cuisine.
