Description

The Aloxe-Corton by Labouré-Roi comes from the namesake appellation located in the northern part of the Côte de Beaune, at the foot of the Corton mountain. The area also includes part of the municipality of Ladoix-Serrigny and is famous for its two Grands Crus, Corton and Corton-Charlemagne, as well as 14 climats classified as Premier Cru. The soils are stony and calcareous in the upper part, while in the lower part, clays rich in siliceous limestone predominate, contributing to the complexity and robustness of the wine.

The Pinot Noir grapes are harvested manually and subjected to a cold pre-fermentation maceration for 4-5 days at a temperature between 10 and 14°C. This is followed by alcoholic fermentation with selected yeasts, with daily punch-downs and pump-overs. The wine is then aged for about 16 months in barrels, of which 20% are new, to add structure and elegance without overpowering the fruit.

The color is dark cherry red, brilliant and intense. The nose is elegant, with aromas of black cherry and blackcurrant accompanied by undergrowth notes. On the palate, it is vibrant and robust, with flavors of red fruit, particularly candied cherry, followed by a delicate woody finish and soft tannins, with a light hint of licorice.

Perfect with grilled or stewed red meats, roasted or glazed poultry, and washed rind cheeses such as Époisses, Ami du Chambertin, and Livarot.
