Alta Langa Brut Oltrequota Cinquecento by Vite Colte is a Metodo Classico sparkling wine from the hills of Piedmont, made from a blend of Pinot Noir and Chardonnay. This sparkling wine offers a fresh and harmonious style, with a fine and persistent perlage. The bottle refermentation and long aging on the lees provide balanced structure and aromatic complexity, ensuring precise drinkability.
Where it comes from
The wine comes from the Alta Langa area. The pedoclimatic conditions favor the ripening of the grapes, while the calcareous soils with marl and sandy layers offer minerality and freshness. These conditions support a savory profile and a clear territorial identity.
How it is produced
The grapes are handpicked into crates and gently pressed to obtain only the free-run must. Fermentation takes place at a controlled temperature, followed by bottle refermentation according to the Metodo Classico. The wine ages on the lees for at least 30 months at low temperature, developing a creamy mousse and more intricate aromas, resulting in a defined taste profile.
Tasting notes
In the glass, it displays a bright straw yellow color with a fine and persistent perlage. Notes of bread crust, toasted almond, and delicate floral hints emerge on the nose. On the palate, it is full and smooth, supported by lively acidity and pleasant minerality. The creamy mousse provides softness and a fresh finish that invites you to take another sip.

This Metodo Classico pairs well with light cured meats and soft cheeses for aperitifs. In Piedmont, it accompanies raviolini del plin with butter and sage, local cheese fondue, and tajarin with truffle, enhancing the creaminess and truffle aroma.
