Description
The Alta Langa Metodo Classico Extra Brut by Cascina Chicco is an elegant sparkling wine from Piedmont that gracefully expresses the potential of the hilly terroir of Alta Langa. It is made from a classic blend of Pinot Noir and Chardonnay, which gives the wine a significant structure and a complex aromatic profile, typical of the mountain bubbles of this denomination.
The winemaking process involves gentle cold pressing immediately after the manual harvesting of the grapes in mid-August. This is followed by the first fermentation in steel, designed to enhance the varietal characteristics of the grapes. After a few months, bottling for foaming and the second fermentation takes place at 14°C. The wine then matures for 36 months in the bottle on the lees at a controlled temperature between 12 and 13°C.
In the glass, it presents a straw yellow color with golden reflections, accompanied by a fine and persistent perlage. On the nose, it is complex, with floral notes and hints of white-fleshed fruits and citrus. On the palate, it is dry, vertical, and structured, with a long aftertaste that recalls mineral and citrus nuances.
Excellent to accompany seafood starters, fish carpaccios, or dishes based on shellfish.
