Description

Stiftsgarten Sylvaner is a white wine from Alto Adige Valle Isarco produced by Abbazia di Novacella in the Novacella area, from vineyards located between 600 and 610 meters above sea level on glacial-origin soils with south-west exposure. Made from Sylvaner grapes trained on the Guyot system, it represents an intense and territorial expression of this variety, characterized by elegance, structure, and pronounced minerality.

Vinification takes place in barrique at controlled temperature, followed by a long maturation period that continues both in wood and in bottle. This process allows the wine to develop complexity, aromatic depth, and significant structure, while maintaining balance and finesse.

In the glass, it appears with an intense golden yellow color. On the nose, ripe apple, pear, and apricot notes emerge, accompanied by hints of brioche and delicate touches of vanilla. On the palate, it is powerful and enveloping, with fine spices, vibrant minerality, and a long, persistent finish.

It pairs perfectly with richly structured fish dishes, white meats, and hearty specialties of Alpine cuisine.
