Amarone della Valpolicella Riserva DOP Cave di Prun 2007 Tenute Salvaterra
Description
Amarone Cave di Prun was born within the vineyards of Tenute Salvaterra, located in the splendid territory of Valpolicella and cultivated according to principles of eco-sustainability.
It is produced with Corvina, Rondinella and Corvinone grapes, typical of the area. These grapes are carefully selected and harvested by hand in mid-October and then left to dry in the fruit cellar for 3-4 months. The must ferments at a controlled temperature of 18-20 ° C for about 30 days, followed by an aging of 46 months, mostly in wood, between barriques and large barrels.
Intense ruby red wine, this Amarone has spicy sensations of black pepper and vanilla, well combined with notes of cherry and black currant. In the mouth it is rich and elegant, with a persuasive harmony that highlights decidedly interesting acid notes.
A wine with long aging potential, it goes well with savory dishes such as game, red meats and aged cheeses but it can also be intended as a meditation wine.
