Description
The Amarone della Valpolicella Proemio di Santi was born in vineyards located in the municipalities of San Pietro di Cariano, Marano and Fumane, in the province of Verona.
It is produced 50% with Corvina grapes, 30% with Corvinone grapes and 20% with Rondinella grapes, harvested only by hand towards the end of September. Fermentation takes place at controlled temperature for 5 weeks. Subsequently the wine ages in barriques for about 24 months, and for a further 12 months in bottle.
The Proemio is characterized by a ruby red color. The nose opens with an intense and complex bouquet, with hints of cherry and plum, enriched with pleasant spicy notes of vanilla and cinnamon. On the palate it is full and generous, with an elegant base of pleasantly persistent spice jam. The wine has a great balance and infinite elegance.
Perfect to accompany red meats and game, it is ideal in combination with aged cheeses
