Description
The Amarone della Valpolicella from the Conte di Villa da Filicaja Collection originates from the vineyards of the municipalities of San Pietro in Cariano and Negrar, in the province of Verona.
It is produced starting from the typical blend of Amarone: Corvina Veronese for the most part, then Corvinone, Rondinella and Croatina. The grapes are harvested by hand and subjected to a drying period. Fermentation takes place in steel for 50 days, after 30 maceration on the skins. The wine ages for 30 months in Slavonian oak barrels and for a further 3 months in bottle before being marketed.
It is characterized by an intense ruby red color with garnet reflections. The nose is complex and intense, with notes of red fruit that alternate with elegant spicy hints. On the palate it shows balance and good tannins, which make use of a remarkable structure.
Excellent to accompany braised and game, it goes well with all aged cheeses.
